Easy Recipe: Slow Cooker Beef Stew

No matter which name you use…Crockpot, Slow Cooker, Heavenly Delight….food made within it tastes….ooohhh so good! From meat that literally falls off the bone to rich and creamy sauces, slow cookers are a wonderful kitchen aid for all individuals, regardless of cuisine preference.

As a busy work at home wife and mom, I’m constantly searching for homemade meals ideas that are economical and flavorful.  I have two various sized slow cookers that are great for feeding my immediate family or to entertain guests.  My mother bought me a Rival Crockpot soon after I was married and I bought a large old-fashioned WestBend Crockery Slow Cooker from a church sale last year. I enjoy having two varying sized slow cookers because it gives me the flexibility to create different slow cooker recipes.

*FUNNY STORY* After the birth of my identical twin boys, my parents would come over to assist with their new twin grandboys.  At the time the boys were not sleeping through the night and although I had both of them on the same schedule, I was pretty much a walking zombie from the lack of sleep and double care of newborns. While my Mother and I were holding the twins in the living room, my Father goes to the kitchen to make something for me to eat.  He decides to make one of my favorites, his famous Cuban black beans, to get some iron and strength back in my deprived body. My Mother and I hear him taking out a pot from the cabinet and busily preparing the beans. After a while, we hear an EXPLOSIVE CRASH and the sound of what seemed like glass BREAKING. We run into the kitchen–twins in hand–to find black beans falling over the front of the oven door and dripping onto the white kitchen floor. On top of the stove there was the inside (stoneware) of my crockpot, completely broken and shattered with black beans oozing out of it. My crockpot was silver and the stoneware inside was black with black handles on the side. Now, because of my foggy condition, I had washed the crockpot’s stoneware and did not put it back inside the crockpot machine. I left it next to the other dark colored pots and pans in the cabinet. My Father reaches into the cabinet and grabs the stoneware thinking it was a pot. My Mother looked around incredulously and proceeds to exclaim in Spanglish (half Spanish & half English)–“What did you do? How could you not know that you were using the crockpot?…You used the crockpot on a stove to cook beans! The kitchen could have exploded!” My Father’s response was, “I didn’t know it was a crockpot! I thought somebody sent Joscelyn in the mail a new fancy pot from her computer things!” (blogging)  Needless to say, I was tired, sleepy, and hungry, and it was one of my favorite foods so I shrugged my shoulders, scooped up what was on the stove, and happily ate my black beans! 🙂

Slow Cooker Hearty Beef Stew
Adapted from McCormick.com
Makes: 8 servings
Prep Time: 15 minutes
Cook Time: 8 hours on LOW or 4 hours on HIGH

Ingredients
5 cups cut-up fresh vegetables, such as carrots, celery, onions and potatoes
2 pounds beef stew meat, cut into 1-inch cubes
1 package McCormick Slow Cookers Hearty Beef Stew Seasoning
1 1/3 cups water

Directions
1. Place beef and vegetables in slow cooker.
2. Mix Seasoning and water until blended. Pour over beef and vegetables; toss to coat well. Cover.
3. Cook 8 hours on LOW or 4 hours on HIGH. Stir before serving.

*TIPS*   Add cut-up tomatoes or peppers.  Trim the meat and cut the veggies into pieces the night before, then refrigerate until you’re ready to start cooking. Remember to cover the potatoes with water.

    OMG how scary that the pot exploded! I can’t imagine the mess.

    I love my crockpot! For years I never used one and now I can’t live without it.

    Isn’t it just typical of a dad, he grabs the fancy pot not knowing any specifics. He thought somebody sent you a new fancy pot from (your) computer things! That’s my favorite part.

    As for your recipe, I like how simple it is. McCormick’s has done all cooks a great flavor by combining the spices in one easy packet.

    And yes, I must admit to having more than one of this gadget, so there’s no judgment as to you picking up the black beans from the stove and eating them.

    OMG! That sounds like something my hubby would do. Just two days ago, he made a roast with an oven bag and guess what he forgot? He forgot to vent the bag. The whole kitchen was full of smoke and my clean oven was now dirty! Argh! It’s still kinda dirty so I know I have to get on my knees and scrub it again. Men! LOL By the way, that’s an easy recipe. I may have to try that. Thx!

    As for the recipe I LOVE it! I was planning on making my own stew in my new slow cooker this week. My boys love it and its super easy.

    Holy shock! I would have been completely in tears, being such a new mom and in a fragile emotional state. But it is kind of funny. Glad nobody was hurt and you got your beans! Mmmn. Yum! I want that recipe! 😉 This sounds good, I may try it with chicken, I don’t do beef. Yum.

    Yikes! That’s funny and scary at the same time. Thank goodness everyone was okay. Cooking in a crockpot is my all time favorite. Your stew looks super delish! I’ll have to try it out soon.

The journey of being a parent and caregiver to a VIP child or adult with medical or neurodiverse needs is unlike any other. It can be a daily battle across states (and countries) to find quality care and services that are needed for their proper development. It's why one of our goals at @hopetorchlighters torchlighters for the past 8 years has been to continue sharing resources and providers that are not only “insurance approved” but also “VIP approved”. Our superhero has been blessed with wonderful occupational therapists throughout his journey. Your influence is felt in many ways, from the endless love you gave and your wonderful sense of humor to the strength of character and faith you carried. You consistently supported numerous people, organizations, businesses, non-profits, and churches for over 50 years.
🕊️It is very important to me—and to your grandsons—to continue honoring you (and Daddy) on your special days and by living a life that reflects the trailblazing lives you both led. More than that, it’s the faith and love you instilled in us. The loss still feels fresh, as if it happened yesterday. When someone irreplaceable is no longer physically with you, it’s not something you simply “get over.”
