Creative Ideas for Transforming Thanksgiving Leftovers

While that savory smell of roasted turkey and pumpkin pie are long gone, the leftovers are usually plentiful. Like any good mom, you’ve prepared enough food for an army. Even after everyone has taken home leftovers, you have enough Thanksgiving food for a few more feasts. What’s for lunch? Turkey. What’s for dinner? Turkey. That may be the case, but it doesn’t have to be boring! Turkey is extremely versatile. Leftover turkey is such a delicious ingredient that can be used as the base for many recipes, especially if you make it like I do; marinated in something delicious like mojo de ajo before cooking. Here are a few other ideas:


· But My Turkey is Dry: Shh! No one has to know. This is very common for even the most experienced chefs since cooking a perfectly roasted turkey can be challenging given the size of the bird and preparation methods. Consider sautéing some sliced red and green bell peppers, onion and garlic in a little Crisco® 100% Extra Virgin Olive Oil to make easy turkey fajitas. Sautéing provides you with a good opportunity to add moisture back into the meat. Creating a hearty turkey soup with your leftovers is another way to handle turkey meat that is on the dry side.


· Time and Help on Your Hands: Ask family and friends to pitch in a few days after Thanksgiving to help make turkey empanadas or turkey tamales. Make a simple filling with your favorite cheese like a mixture of salty cotija with Oaxacan cheese that melts beautifully. If you don’t have time to make your own chile, use your favorite store-bought salsa and add chopped chunks of turkey. No one would ever guess these delicious new creations once sat at the Thanksgiving table. Sit together with friends and family to fill and fold delicious empanadas and tamales.


· The New Turkey Sandwich: Instead of the same old turkey with mayo on sliced bread, use your tasty turkey leftovers to create sandwiches that are fun to eat. Shred turkey on crusty French bread and add fig marmalade or better yet, some of the leftover cranberry relish. Add a little zing with a few pickled jalapenos or my favorite: add tetilla or quesillo to top off the sandwich. Forget the bread altogether and chop turkey with creamy manchego béchamel as the filling for croquetas.


· Not Just for Pie: Pumpkin, sweet potatoes and yams are not only for pie. These seasonal vegetables can be mixed with a little chicken broth, spices and a hint of cream for a heart-warming soup. Leftover yams can be mashed with eggs and cream to make a surprising flan.

Incluso después de que todo el mundo se haya llevado sobras a casa, aún tienes suficiente comida para un buen banquete. ¿Qué hay para el almuerzo? Pavo. ¿Qué hay de cenar? Pavo. Ese puede ser el caso, ¡pero no tiene por qué ser aburrido! El pavo es extremadamente versátil. Las sobras del pavo son un ingrediente tan delicioso que se pueden utilizar como base de muchas recetas, especialmente si lo haces como yo, marinado en un delicioso mojo de ajo antes de cocinarlo.

The holidays can be beautiful… but for many grieving parents — especially special needs parents — this season hurts in ways most people never see.

Between disrupted routines, sensory overload, and the ache of missing someone you love, December can feel overwhelming. And here’s what most don’t realize:

Nearly HALF of Christians stop attending church after losing a loved one… not because they’ve lost their faith, but because they feel the church doesn’t know how to walk with them through grief.
These families aren’t leaving God —
they’re leaving because they feel unseen in their pain.

As someone who advocates for families of ALL abilities, I’m sharing a new blog post today on how we can support grieving loved ones — especially special needs parents — with compassion, faith, and presence this holiday season.

If someone in your life is grieving, please don’t stay silent.
Say their loved one’s name.
Offer specific help.
Create space for their emotions.
Pray with them.
Walk with them — gently, consistently, faithfully.

Because no parent should have to grieve alone during the holidays.

🏆 Earlier this week, I was once again filled with thankfulness, love, and faith. 
🏆 I want to express my heartfelt gratitude to Home Health Care USA for naming me the “Latina American Caregiver of the Year!” 
🏆 Caregivers are among the unsung heroes in our society, and there are many different types of caregivers. For instance, the “Sandwich Generation” refers to individuals who are caring for both their aging parents and their children simultaneously. These caregivers often provide physical, emotional, and financial support. More than 50% of Americans in their 40s and 50s are currently caring for both their children and their senior parents—and usually without any help from extended family. 
🏆 Some caregivers dedicate their entire lives to caring for a child—or children—with disabilities into adulthood. Unfortunately, many caregiving parents or family members do not get a break or have quality time for themselves. About 50% of couples with special needs or neurodiverse children end up getting divorced. 
🏆 Having experienced both of these caregiving situations and still living within them, being named “Latina American Caregiver of the Year” means more to me than just an award. It symbolizes the millions of unpaid caretakers across the country who provide loving, effective care for family members or friends. 
🏆 I also want to extend my gratitude to all those who have followed my caregiving journey the past 17 years, including my care for my beloved late parents and my superhero, Joshua, on my social channels, Mami of Multiples, and Dr. Joscelyn Ramos Campbell. The BEST is yet to come! 🙌
