Tis the season for pumpkins!
1 quart vanilla ice cream, softened
1/3 cup sugar
1-1/2 cups pumpkin pie filling
1 teaspoon vanilla
1 cup pecans, chopped ( optional)
In a large bowl, mix pumpkin, sugar, and vanilla.
Fold in ice cream and nuts.
Put into a greased 8 x 8 pan and freeze for 3-4 hours.
Scoop out and enjoy.
