Growing up in Brooklyn Heights, New York, I like to consider myself somewhat “knowledgeable” on Italian foods. I was raised among some of the best Italian restaurants, delis, bakeries and pizzerias in New York and arguably among the U.S. Even as a small child, I could understand and easily order a dish “al forno” around the same time I was learning to color within the lines.  Due to my upbringing and my father’s career, I had more Uncle Lous, Uncle Frankies, and Uncle Anthonys then I could possibly count so its no surprise that I view Italian food with a certain regard and respect.
Last week, my teen correspondent/son, Joseph and I, had the pleasure to visit Anthony’s Coal Fired Pizza in Orlando, FL for the #WellDoneTour.  Open and spacious, Anthony’s Coal Fired Pizza in Orlando, FL menu features a selection of of pizzas and Italian dishes.
Coming from a traditional Italian family with a taste for delicious food, founder Anthony Bruno, opened Anthony’s Coal Fired Pizza in 2002, opening the first restaurant on Federal Highway in South Florida.  Bruno’s goal has always been to bring top-quality pizza to customers. The foundation for his concept is the 800 degree coal-burning oven that cooks pizza in four minutes.

Interesting Fact: Contrary to the image of some coal types, anthracite is the one of the world’s cleanest burning fossil fuels – cleaner than wood fires or your gas grill – with minimal black smoke to damage our environment. Anthony’s Coal Fired Pizza uses only anthracite for its “well done” pizza, chicken wings and pork spare ribs so customers enjoy great taste with an eco-friendly cooking process. Different from preparing a pizza that will be cooked in a conventional oven, pizzas cooked in a coal burning oven is prepared by putting cheese first on dough and proceeding with placing sauce on top of cheese.  The coal fire will allow sauce to spread during cooking. Pizzas in a 800 degree coal-burning oven will take about 4-6 minutes to cook.

One of the unique aspects about Anthony’s Coal Fired Pizza is its menu options.  As the name suggests, coal fired pizza is among its specialities, but the menu offers a variety of Italian dishes that are family and budget friendly. Menu choices include various pizza types, coal-oven-roasted chicken wings, pork spare ribs, meatballs with ricotta, Italian salads and New York style cheesecake. We were able to sample a range of menu choices and the all dishes were simply DELICIOUS!

Interesting Fact: Anthony’s Coal Fired Pizza has 27 locations throughout the East Coast.  Its known for being a favorite among locals and celebrities. NFL legend, Dan Marino, is a regular patron and enjoyed the food so much that he became a restaurant partner. “Eggplant Marino” is a dish named in honor of Dan Marino.

The holidays can be beautiful… but for many grieving parents — especially special needs parents — this season hurts in ways most people never see.

Between disrupted routines, sensory overload, and the ache of missing someone you love, December can feel overwhelming. And here’s what most don’t realize:

Nearly HALF of Christians stop attending church after losing a loved one… not because they’ve lost their faith, but because they feel the church doesn’t know how to walk with them through grief.
These families aren’t leaving God —
they’re leaving because they feel unseen in their pain.

As someone who advocates for families of ALL abilities, I’m sharing a new blog post today on how we can support grieving loved ones — especially special needs parents — with compassion, faith, and presence this holiday season.

If someone in your life is grieving, please don’t stay silent.
Say their loved one’s name.
Offer specific help.
Create space for their emotions.
Pray with them.
Walk with them — gently, consistently, faithfully.

Because no parent should have to grieve alone during the holidays.

🏆 Earlier this week, I was once again filled with thankfulness, love, and faith. 
🏆 I want to express my heartfelt gratitude to Home Health Care USA for naming me the “Latina American Caregiver of the Year!” 
🏆 Caregivers are among the unsung heroes in our society, and there are many different types of caregivers. For instance, the “Sandwich Generation” refers to individuals who are caring for both their aging parents and their children simultaneously. These caregivers often provide physical, emotional, and financial support. More than 50% of Americans in their 40s and 50s are currently caring for both their children and their senior parents—and usually without any help from extended family. 
🏆 Some caregivers dedicate their entire lives to caring for a child—or children—with disabilities into adulthood. Unfortunately, many caregiving parents or family members do not get a break or have quality time for themselves. About 50% of couples with special needs or neurodiverse children end up getting divorced. 
🏆 Having experienced both of these caregiving situations and still living within them, being named “Latina American Caregiver of the Year” means more to me than just an award. It symbolizes the millions of unpaid caretakers across the country who provide loving, effective care for family members or friends. 
🏆 I also want to extend my gratitude to all those who have followed my caregiving journey the past 17 years, including my care for my beloved late parents and my superhero, Joshua, on my social channels, Mami of Multiples, and Dr. Joscelyn Ramos Campbell. The BEST is yet to come! 🙌
