Day after Thanksgiving Turkey Croquettes
Recipe Provided By Florida Dairy Farmers
  1. In a saucepan, sauté the carrots, onion and celery until tender
  2. Whisk together the milk, flour and poultry seasoning and pour over vegetables
  3. Cook until mixture is thick
  4. Remove from heat and allow to cool slightly
  5. Stir in the leftover turkey and beaten egg (mixture will be thick)
  6. Shape into patties
  7. Coat each patty lightly with bread crumbs
  8. Cook patties in a nonstick skillet over medium high heat for 6 minutes each side
