It was another typical morning in 2008…

At the time, I had 3 children – an 11 year old son and 6 month old twin baby boys.  I had recently stopped working outside of the home full-time and was trying to get accumulated to being at home full-time for the first time. Though my thoughts were also in the infancy stages of working from home as a “mompreneur”, I was basically in survival mode caring for my oldest and 2 crawling babies at the same time.

On that particular morning, I woke up a later than usual.  I am what is typically called a “morning person” and like to rise earlier than others so I can get things ready for the day.  My normal sleep cycle has me feeling sleepy by 8:30 or 9:00 PM since I was a young girl but motherhood is 24 hours a day.  I was falling sleep most days out of sheer exhaustion late in the evening.  When I woke up late that morning, everything I forgot to do the night before started to hit me like a ton of bricks.

I jumped and awoke my 11 year old son, who was minutes from missing the school bus.  I didn’t have his lunch ready and there was going to be barely any time for him to eat breakfast before the bus arrived.  As I was shoving money in his hands so he could eat breakfast and lunch at school, I heard shrieks of delight and giggles in the twins’ room.  I ran upstairs to find that the twins were already awake and seemed to have been up for a little while because their laundry was on the floor.  Although, they were 6 months old and they couldn’t stand straight without assistance, they somehow managed to spill the clean laundry (that I had forgotten to put away in their drawers the night before) from on top of the changing station that was connected to their cribs.  I still to this day don’t know how they did it but there was the former pile of folded clothes now seemingly strewn across the floor along with a strong odor of two dirty diapers coming from their little tushies.

As I hear my son opening the door and saying goodbye because the school bus was arriving, I remembered his field trip form and money was due that day and the form and money was stuffed inside my purse on the kitchen table.  As I jumped over the laundry on the floor – holding my breath to not smell the pungent odor from the twins’ dirty diapers – I hurriedly grabbed two heavy babies in each arm and began to race downstairs to see if I could catch my oldest before he made it to the bus stop.  In the process of rushing down the stairs, I didn’t notice one of the twins’ toy rattle near the end of the steps.  I stepped on it, lost some of my footing and felt my foot turn out from under me.  Thankfully, I was able to balance myself up against the corner of the wall and managed to place the twins safely on the couch before actually falling down myself.

As I sat on the floor a little dazed about what had just happened, I began to rub my throbbing ankle.  I looked up and saw the twins were looking at each other and then looking at me.  They looked totally bewildered – like they knew things were not working out this morning.  It seemed as if they were communicating with their facial expressions. In the midst of the haze (and internally laughing at myself), I grabbed my cell phone to take a quick picture to capture the funny (and somewhat disastrous) moment.  The pictures below are the faces they were making (and what I think they were thinking at that time).

 

We’ve all been there. Parenthood is not for the faint of heart. You go into each morning thinking you are going to conquer the day like Braveheart but end up most nights feeling like Sleepy from the Seven Dwarfs. From waking up late, missing the bus, to stepping in a puddle, sitting in endless traffic or falling down – bad mornings happen, and can sometimes leave us feeling frustrated, grumpy or down in the dumps.

A select number of stores offer a new customizable made-to-order experience. This means you can create sandwiches, pizzas and specialty beverages made just the way you like it.

RaceTrac has made-to-order pizza available all day. You can grab a piece or go and customize your own 7-­‐inch pizza, selecting from toppings like mushrooms, black olives, onions, jalapenos, bacon,  sausage  and pepperoni.

Target’s The Toycracker Debut on December 11 {+ $25 Target Gift Card Giveaway}

The holidays are a time for celebrating family traditions.  When my husband and I got married, one of our first Christmas decorations that we bought together were two nutcrackers that fit just perfectly on our mantle.

As the years went by and our house filled with more little feet and laughter, we added several other traditions.  With the help of our children, our traditions have expanded to decorating our home the day after Thanksgiving and driving around to see the lights and decorations in the neighborhood.  We now open one present on Christmas Eve after attending church and read the Christmas story from the Bible on Christmas morning even before opening presents.

In the midst of the busyness preparing for Thanksgiving (and the rest of the holiday season), staying healthy and having much-needed energy are a priority.  No one wants to be ill during Thanksgiving or the holidays and not be able to experience the festive activities.

Check out the following 3 easy tips to help you get ready for Thanksgiving:

Eat a Protein Packed Breakfast – Its very easy to skip over breakfast in the rush of the morning but it really is the most important meal of the day.  Eating a mix of nutrient-rich foods is the key to a healthy breakfast and to preventing a mid-morning energy slump (especially when preparing the turkey in the early morning hours)! Eating these foods allows you to get the most vitamins, minerals and other nutrients (without too many calories) from the foods you choose. Nutrient-rich breakfast foods include low-fat or non-fat dairy, fruits, vegetables, whole grains and lean protein. For example, try these double protein enriched pancakes shown in the video below.

Ask for Help Ask family and friends to pitch in a few days before Thanksgiving to help with the preparation.  From grocery shopping to decorating, a lot of work occurs before even starting to cook an entire Thanksgiving meal.  An extra set of hands to help babysit children so you can go shopping without distractions or having someone set & dress the Thanksgiving table or prep ingredients beforehand (cutting, dicing, chopping, etc.) does help to lighten the workload.

Be Creative With Your Menu & Leftovers Instead of the same old turkey with mayo on sliced bread, use your tasty turkey leftovers to create sandwiches that are fun to eat. Shred turkey on crusty French bread and add fig marmalade or better yet, some of the leftover cranberry relish. Forget the bread altogether, chop turkey and make Day after Thanksgiving Turkey Croquettes.  Try a new spin on a Thanksgiving side dish and dessert with Puré de Yuca con Queso Alpine Cheddar and Pastel Tres Leches de Calabaza.

Instructions
  1. In a saucepan, sauté the carrots, onion and celery until tender
  2. Whisk together the milk, flour and poultry seasoning and pour over vegetables
  3. Cook until mixture is thick
  4. Remove from heat and allow to cool slightly
  5. Stir in the leftover turkey and beaten egg (mixture will be thick)
  6. Shape into patties
  7. Coat each patty lightly with bread crumbs
  8. Cook patties in a nonstick skillet over medium high heat for 6 minutes each side

  1. Coloque la yuca y el ajo en una olla con agua hasta que tape la yuca. Lleve a ebullición a fuego alto. Baje el fuego a medio y cuando la yuca comience a ablandarse, agregue sal al gusto. Cocine hasta que la yuca esté bien suave. Alrededor de 20 – 30 minutos dependiendo si es congelada o fresca.
  2. Escurre y reserve una taza del agua de la cocción. Pase la yuca y el ajo por el prensa papas o aplástalos con un tenedor. Vuelva a poner la yuca en la olla, agregue 1/2 taza del agua que has reservado, ¾ taza de la leche y la mantequilla, revolviendo bien a fuego muy suave. Añada sal y pimienta gusto. Finalmente incorpore el queso, revolviendo con cuchara de madera hasta que esté homogéneo. Pruebe el puré y asegure que la sazón está a su gusto. Si fuera necesario, puede agregar un poco más del agua en que cocinaste la yuca o leche.
  3. Sirva el puré rociado con las hojitas de tomillo o tope con queso parmesano y hornee por 20 minutos a 350 y después decore con el tomillo.

Pastel Tres Leches de Calabaza

Instructions
  1. Calienta el horno a 350 °F (325 °F para un molde oscuro o antiadherente). Rocíe con spray de especial para cocinar en el fondo y los lados de un molde de 13 x 9 pulgadas.
  2. En un tazón o recipiente grande, bata los ingredientes para el pastel con una batidora eléctrica a baja velocidad durante 30 segundos, y luego a alta velocidad durante 2 minutos, raspando el tazón ocasionalmente. Vierte en el molde.
  3. Hornea de 29 a 35 minutos o hasta que, al insertar un palillo de dientes de madera en el centro, salga limpio. Deje reposar durante 5 minutos. Haz perforaciones en la parte superior del pastel caliente cada 1/2 pulgada con un tenedor de dientes largos, limpiando el tenedor ocasionalmente para evitar que se pegue.
  4. En un tazón grande, mezcle las leches, ponche y especie. Vierta lentamente sobre el pastel. Tape; refrigere durante aproximadamente 3 y 4 horas o hasta que el pastel absorba la mezcla de leches.
  5. Prepare el betún batiendo la crema para batir, la azúcar pulverizada y la especie de pastel de calabaza con una batidora eléctrica a velocidad alta hasta que picos suave formen. Agregue el queso creama y continúe batiendo por un minuto. Cubra el pastel con el betún de crema batida y queso. Refrigere el pastel por al menos 3 horas o durante toda la noche. Espolvorea el pastel con especie de pastel de calabaza antes de servir. Guarde tapado en el refrigerador.

Freezer Meals: Burrito Pie and Chicken Parmesan Casserole Recipes

Let’s talk freezer meals!

I’m not talking about those box meals in your local grocery store’s freezer section.  I’m talking wholesome, healthy, KID-FRIENDLY freezer meals! I got into freezer meals a little over a year ago because dinner time was the HARDEST part of my day! With multiple children running around, who were usually cranky from a full day of play, when it was time for dinner – it was a nightmare! There were nights I would throw a frozen pizza in the oven and heat up a bag of broccoli and call it a night! (Don’t judge me because you know we have all been there a time or two). 🙂 I decided there had to be a better solution to deal with this constant dilemma.  I wanted to find a way to still provide my family with a healthy, home cooked meals that didn’t both break the bank and require 2 hours in the kitchen prepping, cooking and cleaning.  So, I did what any good, respectable mother would do…I headed online of course!

Before we get to online recipes, I want to briefly share about Freezer Meal 101.

What are Freezer Meals and Freezer Meal Prep?

The idea behind freezer meal prep is to always have healthy and affordable meal options available in your freezer. It’s a great way to plan in advance, save money on groceries, and avoid the extra costs associated with take-out meals or dining out. Having meals in your freezer prepped and ready to heat will bring peace to your mealtime and remove the stress of the last minute feeling just before dinner time when you are forced to ponder that constant question of “what’s for dinner?”.

How Does it Work?

You take 1 – 2 days to buy your ingredients, prep your food, and then cook it and assemble it into freezer safe dishes or pans to be used as you need. When you are ready to eat, place a meal from the freezer to your fridge the night before so it’s thawed for you to heat up the next day. You can also pull it out of the freezer the same day and to let it thaw out completely on a flat surface.

What Are the Benefits?

Saving time by cooking only 1 or 2 days, instead of every single day. Saving money (and saving on your grocery bill) when you buy ingredients in bulk to assemble the meals. Items are cheaper when you buy in bulk and you are not wasting food because you are preparing several meals at one time.  Save frustration by always having a meal in the freezer to pull out when you have run out of ideas or time—or both! Another great benefit is always having a meal on hand to take a friend who may have just had a baby, or been in the hospital. In my opinion, freezer meals really are the BEST THING EVER!

Now back to online recipe hunting. Here is the thing about searching on Pinterest, Facebook, etc., you will get flooded with a TON of different recipes and ideas. A lot of those recipes being ones that you piece together raw and still have to actually cook the day you want to eat it.  I don’t know about you, but to me that defeats the whole purpose of what I’m trying to do here.  I want meals ready to just be thrown into the oven (or crockpot/slow cooker), eat, enjoy and then just throw that pan away! As the new #AccidentalCookingMami for Mami of Multiples, I am sharing below two of my favorite and easiest freezer meal recipes to try for yourself.

These recipes are all tried personally by my family and are both hubby, and more importantly, KID APPROVED! The best part is I’ve already gone through all the fails for you so you can take confidence in what you are preparing won’t be thrown in the trash and Pizza Hut being called at 7 o’clock at night with screaming children at your feet!   1. In a large skillet over medium heat, sauté the ground beef for 5 minutes. Add the onion and garlic, and sauté until onions are translucent (about 5 more minutes). Drain any excess fat, if desired. Mix in the olives, green chile with tomatoes, and enchilada sauce. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes.
  2. While meat mixture simmers, spread a thin layer of refried beans on one side of each tortilla. Set aside.
  3. In the bottom of the casserole dish(es), spread a thin layer of the meat mixture. Cover with a layer of tortillas that have been smeared with the refried beans, followed by more meat mixture, and then a layer of cheese. Repeat tortilla with refried beans, meat, and cheese pattern until all the tortillas are used up. Top off the casserole with a layer of meat mixture and cheese.
  4. On the day you are ready to cook, preheat oven to 350 degrees. Place thawed dish into oven and bake for 20-30 mins. Remove foil the last 10-15 minutes of baking, so the top can brown.

Instructions
  1. Grease casserole dish with cooking spray.
  2. Layer the chicken in the bottom. Dump in the marinara sauce and mix with the chicken. Next, top with both cheeses until all the chicken is covered.
  3. In a small bowl, mix the breadcrumbs, olive oil, fresh herbs and a dash of salt and pepper together.
  4. Sprinkle the seasoned breadcrumbs over the top.
  5. Put casserole together and freeze it before baking. When you're ready to cook it, let it thaw in the fridge over night. If it's still slightly frozen in the middle, you'll just have to cook it longer than the recipe calls for or defrost a bit in the microwave before baking. Cover it with foil if the top gets too brown in the oven. Bake for about 20-25 minutes or until golden on top and bubbling on the sides.

Recommended Tips

  • Plan ahead and check your local grocery stores for coupons or BOGO (buy one – get one free coupons) so you can save when purchasing ingredients.  You can sign up to your grocery store’s email list for coupons or use coupon apps like Ibotta, Checkout 51, Flipp, SavingStar, RetailMeNot, SnipSnap, Grocery IQ and Grocery Smarts.

  • Use Reynolds aluminum foil or aluminum pan lids to cover dishes before placing in freezer.

  • Use disposable trays or pans for easier clean up.

  • Once you cover the dish with foil to place in the freezer, put tape on the top of the foil and write out the reheating instructions so you won’t have to remember when you are ready to use.

Get Creative with DIY Halloween Costumes at Goodwill (+ $25 Gift Card Giveaway)

Growing up, Halloween was one of the biggest holidays in my household! My mother was a costume making superstar! I’m talking, banana trees, caterpillars, and life size baby bottles! Though I have a long way to go before matching her creative abilities, I have one tool my mom didn’t … the wonderful world of Pinterest-inspiration! So with a little browsing, motivation, and hubby’s blessing, I packed up my spunky toddler and set out for materials at our local Goodwill Industries of Central Florida store!

I arrived with the idea that we would be Disney & Pixar’s Finding Nemo characters.  I’d figure out the specifics based on what materials were available and Goodwill did not disappoint!

If you aren’t looking to create a costume yourself, they have a huge selection of already made costumes right now. There were five or six racks with anything from princess dresses and wigs to masks and costume make up. I actually got to chatting with another mom, who was also shopping for Halloween costumes, while we were there and we both were pleased with vast selections and very affordable prices.

We were able to find all our main DIY materials at Goodwill.  With a little creativity and our Goodwill finds, Payton will be dressed as Nemo, my husband, David, will be Dory and I will be a Jellyfish for Halloween this year!

Halloween costumes are typically only worn once, so why not find a low-cost costume and help support our community in the process? When we shop at or donate to Goodwill, we are helping to keep items out of landfills and funding job training and placement programs that assist Central Floridians with barriers to employment. This includes people with disabilities, those with limited work history, military veterans transitioning to civilian jobs, as well as others within the community.
