4th of July is this weekend and families across the country are preparing to celebrate with loved ones and enjoy summertime favorite foods. Grills will be lit and baked goods will be shared during this time of celebration and on hot summer days. My mother is truly a creative woman who can design and create in a flash. When its summer she loves cutting a watermelon and making a beautiful watermelon bakset.
In honor of 4th of July I wanted to share this easy Cucumber-Watermelon Salad recipe that is a perfect compliment to any summer dish and 4th of July festivities. (It can also be easily modified for taste or preference).
Cucumber-Watermelon Salad

Ready in 30 minutes
Ingredients
6 cups cubed seeded watermelon
4 cups cubed English cucumber1 teaspoon salt
1 tablespoon white sugar (optional)
1/2 cup balsamic vinegar
Directions
- Place the watermelon and cucumber cubes in a large bowl, and gently toss with the salt and sugar. Drizzle with balsamic vinegar and toss to coat. Refrigerate for 15 minutes, then gently toss one last time before serving.
*Note: Feel free to substitute for preference or taste with kosher salt (instead of salt), apple cider vinegar (instead of balsamic vinegar) and strawberries (instead of watermelon). Avocados and onions can be added for extra flavor.*
