Easy Recipe: Gloria Estefan’s “Natilla”

As I was reading one of the latest issues of Latina Magazine, it included recipes from Hispanic celebrities for the holidays or family get-togethers. One of featured recipes was Gloria Estefan’s recipe for Natilla (nah-tee-yah), a Cuban traditional custard or pudding that is served during the holidays.  My Cuban father has known the Estefan(s) since their early Miami days (like many others) so I was happy to see a recipe that combined my Cuban ancestry and my sweet tooth!

Gloria Estefan’s Natilla
Makes 8 Servings
Excerpt Latina Magazine
Ingredients
8 Egg Yolks
1 Cup Granulated Sugar
4 Tbsp. Cornstarch
3 Cups Whole Milk
1 Cup Evaporated Milk
1 Piece Lemon Rind
1 Cinnamon Stick
1/4 Tsp. Salt
1 1/2 Tsp. Vanilla
Cinnamon Powder, To Taste
Directions
1. In a large mixing bowl, mix egg yolks, sugar, and cornstarch until completely smooth, then set aside.
2. In a medium saucepan over medium-low heat, place whole & evaporated milks, lemon rind, cinnamon stick, and salt to a boil. Watch closely and stir occasionally to avoid scorching milk.
3. As soon as the milk boils, remove from heat and let cool about 5 minutes. Remove lemon rind and cinnamon stick.
4. Gradually pour heated milk into egg mixture, stirring constantly with a wooden spoon (or using a paddle attachment of stand mixer set on low).
5. Return custard mix to same saucepan used to heat milk, set over medium heat, and bring to boil. Stir constantly.  Reduce heat to low, then cook 2 to 3 minutes, or until pudding thickens to desired consistency.  Add vanilla, stir, and remove from heat. 
6. Using ladle, fill 8 custard cups. Let natilla cool at room temperature, approximately 45 minutes, then refrigerate until completely chilled, at least 3 hours. Serve with dusting of cinnamon powder.

  3. That does look good. What is funny is that in Costa Rica, natilla is sour cream. So I was thinking Jocelyn made sour cream! LOL But this looks yummier!

  9. Natilla always seemed like a different version of flan, until I see this and it’s more like pudding. Thanks for sharing! I’ve been admiring Gloria Estefan’s work since “Doc Doc Doc Doc Doctor Beat” so it’s a pleasant surprise to see this other side of her as mom

  10. Mamma Mia! that looks pretty good and easy. The natilla is a very Cuban dessert. Brings me a bunch of memories back!
